From-Scratch Deliciousness

Tonight I made some homemade enchiladas for dinner.  And when I say homemade, I mean homemade.  Right down to the homemade tortillas.  Every ingredient was from scratch, short of making my own cheese (maybe I'll try that next time!).  I highly recommend a preservative-free lifestyle.  It is so cheap, healthy, and full of deliciousness!


Breakdown of cost for 12 Enchiladas (which will last us for 2 meals):
  • Flour - $0.30
  • Cheese - $1.50
  • Tomatoes - $1.15
  • Olives - $0.50
  • Spices - $0.25?
  • Onion -  $0.50
  • Olive Oil -  $0.50?
  • Pinto Beans - $1.00

  • Total - $5.70
$5.70 for a meal that will last us two nights!  That's $2.85 for one dinner that serves four!  You can't beat that price!

Also, I had made the refried beans about two weeks ago in a big batch and froze them, so after pulling them out of the freezer, making the homemade tortillas, slicing the olives and onions, making the sauce, and throwing it all together, the meal took about 20 minutes to prepare and 15 minutes to cook.  That's what I call a convenient meal.  Then tomorrow, I'll have an incredibly convenient meal since all I have to do is pull them out of the refrigerator and heat them up.  I am all ready anxious to eat them tomorrow night!
