Chili Skillet

April Showers Bring May Flowers..

And what do May flowers bring?  Pilgrims!

But before we can enjoy the Mayflowers and Pilgrims, we need to get through those April Showers.  I find the best way to feel warm and cozy on those dreary rainy days is with the right meal.  Why not reach for a classic comfort?  Here is my favorite, simple recipe for homemade chili:

Chili Skillet
  • 1/2 lb. hamburger
  • 1 large onion, chopped
  • 1/2 lb. dry kidney beans
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 1 can (8 oz) tomato sauce
  • 1/2 c. dry macaroni or penne
  • 2 to 3 t. chili powder
  • 1/2 t. garlic salt
  • 1/2 c. shredded cheddar cheese
Soak dried beans overnight in 6 cups of water.  Drain and boil in 6 cups of fresh water for about 1-1/2 to 2 hours or until beans are soft.  In a large skillet, cook burger and onion until burger is brown and onion is tender.  Drain off fat.  Stir in prepared beans, undrained tomatoes, tomato sauce, macaroni, chili powder, and garlic salt.  Bring to a boil and reduce heat.  Simmer, covered, for 20 minutes or until pasta is tender, stirring often.  Sprinkle with cheese and let stand until melted.  Serve.

Tip for next time:

To make this meal faster, you can prepare beans ahead of time and freeze.  Unthaw under hot tap water and add to dish.  You can also prepare the entire meal and freeze.  Reheat on the stove-top or in the microwave.
