Fried Chicken Gizzards

Bonus Meal!

Remember before we cooked our whole chicken I told you to toss the heart and gizzards in the freezer for later use?  Well, after you have racked up about five chicken's worth of hearts and gizzards, it's time to turn them into a bonus meal.

Fried Chicken Gizzards
  • 1 to 1-1/2 lb chicken gizzards and hearts
  • 1/2 c. flour
  • Vegetable Oil
  • Salt to taste
Parboil the gizzards by placing them in a pot of cold water and bringing to a rolling boil.  Boil for 15 minutes.  Strain and let cool.  Then toss gizzards and hearts in flour to fully coat.  Fry fully submerged in vegetable oil in a skillet over medium-high heat until all sides are golden brown.  Cover the skillet, turn heat down to medium and continue to cook for 10 minutes.  Remove from grease and drain on paper towels.  Season with salt to taste.

This is a meal I grew up on and have always loved.  When I mention it to friends of mine, they always give me a face of disgust, but few have every actually eaten the gizzards and heart that come with a whole chicken.  I really encourage you to give it a try at least once.  If you always fear the unfamiliar, you will miss out on some of the most amazing things in life.

Note:  Try not to worry about the fat and calories.  You will probably only rack up enough gizzards and hearts to eat this once or twice a year.
