The summer months have finally rolled around and with that comes
gardens, fresh vegetables, and the desire for dishes served-cold. As a
little girl, I remember harvesting cucumbers in our family garden on the
real
North Forty
in Maine. Once washed and prepared, my parents would always turn them
into "Adult" and "Kid" Cucumbers that made the perfect homegrown summer
side dish. Here are two recipes that are sure to jazz up your harvested
cucumbers.
"Adult" Cucumbers
- 1 c. vinegar (white or apple cider)
- 1 c. water
- 1 onion, chopped
- 3-4 cucumbers, peeled and sliced
Heat the vinegar on the stove top but do
not
allow to boil. Add water and stir. Pour over cucumbers and onions.
Cover and refrigerate for at least one hour before serving. (Note:
Apple cider vinegar will produce a stronger, but still delicious,
flavor.)
"Kid" Cucumbers
- 1 c. mayonnaise
- 1 c. milk
- 3 T. sugar
- 3-4 cucumbers, peeled and sliced
Mix
the mayonnaise, milk and sugar together and pour over sliced
cucumbers. Cover and refrigerate for at least one hour before serving.
