Sweet Lentils and Rice

A funny accident I managed to create one boring afternoon, this recipe is one of my children's favorites, if not the favorite.  I love to feed it to them because it is so healthy; loaded with whole grains, iron, and protein (three of the trickiest things to get kids to eat).  Sweet Lentils and Rice is great for lunch or dinner.  An incredibly easy dish to cook, it also freezes well, making it a great choice for those busy days.  Not to mention, it is one of the cheapest recipes I know!

Sweet Lentils and Rice
  • 3 c. water
  • 1/2 c. lentils
  • 1 c. dry brown rice
  • 1 c. beef broth (or 1 c. water and 1 beef bouillon cube)
  • 4 T. brown sugar
Throw all ingredients into a medium pot on the stove.  Bring to a boil for two minutes then turn heat down to medium-low and simmer for 30 to 45 minutes or until rice is fully cooked.

To add some extra sweetness and nutrients, toss in some carrots or cabbage while simmering.  Enjoy!
