Roasted Pumpkin Seeds

Nothing completes the joy of admiring your carved pumpkin like snacking on some roasted pumpkin seeds. Though they take a little time to prepare, they are a simple and delicious treat, especially when served with hot apple cider.

Roasted Pumpkin Seeds
  • Pumpkin seeds of one pumpkin
  • 2 T. melted butter
  • Salt to taste
Separate the pumpkin seeds from the flesh and strings of the pumpkin. Place them in a big bowl of water and rub them between your fingers to completely wash them. Strain them and allow to sit in the strainer for 15 minutes, stirring occasionally to help drying.

Scatter them on a cookie sheet and place them in a 200 degree oven for 15 to 20 minutes to dry them. Watch them closely and stir them every few minutes to speed drying time.



 

 

 

 

 

Remove from oven and drizzle with melted butter, stirring to coat. Sprinkle with salt to taste. Bake in a 275 degree oven for 15 to 20 minutes, stirring once. Watch them closely as ovens may vary. Serve and enjoy!

You can also play around with different spices. Try sprinkling them with cinnamon and ginger for a festive treat or spicing them up with some cayenne pepper and thyme. Carve a few pumpkins and make a few different flavors!
