Beef and Cabbage Joes

I remember as a child getting so excited for Sloppy Joe night. It was a rare and delicious treat that allowed us to make a mess while we ate. Few things are as thrilling to a child at dinner time than being encouraged to be sloppy. While I love bringing the messiness to my children for dinner, I prefer to shake up the classic sandwich and go for a sweeter version:

Beef and Cabbage Joes
  • 1 lb ground beef
  • 1 medium onion, chopped
  • 2 c. shredded or chopped cabbage
  • 1 c. frozen corn
  • 1/2 c. barbecue sauce
Cook the ground beef and onion in a large skillet until beef is brown and onions are tender. Drain off the fat. Stir in the cabbage and corn. Cover and cook over medium heat for 4 to 5 minutes, stirring once. Next, mix in the barbecue sauce and simmer, covered, for an additional 5 minutes or until vegetables are tender. Serve on whole grain bread or buns with additional barbecue sauce if desired.

Enjoy the sloppiness and be ready to bathe the kids right after dinner!
