I always push popcorn as one of the greatest snacks out there. It is frugal, whole grain, and convenient. My family loves it so much that we have a
fifty pound bag. That makes for a lot of low cost snacks! But lightly salted popcorn can get a little boring so occasionally I like to pop up a quick batch of Brown Sugar Kettle Corn. It requires a little more effort than plain popcorn but the flavor is worth it!
Brown Sugar Kettle Corn
- 1/4 c. vegetable or olive oil
- 1/2 c. popcorn kernels
- 3 T. brown sugar
- 1 t. salt
Stir together brown sugar and salt. Set aside. In a large pot, pour in oil and add 4 popcorn kernels. Heat over medium-high heat until all 4 kernels have popped. This ensures that the oil is heated evenly so the popcorn is less likely to burn. Add the remainder of popcorn kernels and sprinkle with brown sugar/salt mixture. Cover, lift the pot from the burner and shake it to spread around the brown sugar and salt. Return to heat and shake constantly so the sugar does not settle to the bottom and burn. Once popping slows, remove from heat and immediately pour into a large bowl.
The key to this recipe is to keep shaking the pot. If you find that the popcorn burns quickly, try turning the heat down to medium next time. This is a wonderful snack to make in large batches for parties or store for easy snacks later!
