This is, by far, my all-time favorite cookie recipe. Named for their large size and overabundance of ingredients, these cookies are best enjoyed if you try not to think about the calories.
Monster Cookies
- 1 c. butter, softened
- 2 c. brown sugar
- 1 c. granulated sugar
- 1-1/2 t. vanilla
- 6 eggs
- 1-3/4 c. chunky peanut butter
- 9 cups oatmeal
- 4 t. baking soda
- 6 oz. chocolate chips
- 8 oz. M&M's (regular or mini)
- 6 oz. chopped peanuts or walnuts (optional)
Beat butter until fluffy. Beat in brown sugar, granulated sugar and vanilla. Add eggs and continue beating on medium speed until well mixed. Blend in peanut butter. In a separate bowl, mix oatmeal and baking soda. Add to wet ingredients and mix well, stirring by hand if necessary. Batter will be thick. Fold in chocolate chips, M&Ms and nuts. Using a large spoon, drop onto an ungreased cookie sheet. Bake at 350 degrees for 8 to 10 minutes or until light brown. Allow to rest on cookie sheet for 3 to 4 minutes before removing.
Note that there is no flour in this recipe. Feel free to add a variety of ingredients, candies and nuts to make these cookies more unique, fun and flavorful!
