'Tis the time of year for baking goodies! Starting today and going until Christmas, every Friday I will share with you one of my family's favorite Christmas treats or cookies. Whether you just like to whip up a few for the holidays or you throw big cookie baking parties, I hope these recipes will help add some variety to your Christmas goodies!
This recipe is one I accidentally created one day when I wanted ginger cookies but was running out of a few of the ingredients. After playing around and adding what I had to fill in the gaps, I was impressed with how they turned out and they have made their way into our cookie routine:
Oatmeal Ginger Cookies
- 2-1/2 c. flour
- 2 c. rolled oats (instant or old-fashioned)
- 4 t. ground ginger
- 2 t. baking soda
- 1-1/2 t. ground cinnamon
- 1/4 t. salt
- 1-1/2 c. shortening
- 2 c. white sugar
- 2 eggs
- 1/2 c. molasses
In a medium bowl, combine flour, oats, ginger, baking soda, cinnamon and salt. In a large bowl, beat shortening on low speed for 30 seconds. Beat in sugar, eggs and molasses on medium speed until combined, scraping sides of the bowl if necessary. Beat in as much of the flour mixture as you can, stirring in the remainder. The batter will be thick. Drop in spoonfuls onto an ungreased cookie sheet. Bake at 350 degrees for 8 minutes per batch or until golden brown. Serve!
