If there is a dish in existence that offers a variety of ways to prepare it, meatloaf is definitely the winner. Everywhere you go is a new flavor. Anyone you talk to has a "special" recipe. The only guidelines seem to be that it must contain ground beef and should be shaped like a loaf. The rest is up for interpretation. I have tried several variations of this dish, but the following recipe is by far my personal favorite and I am proud to add it to the ever-growing list of meatloaf varieties circulating throughout the world wide web.
My Meatloaf Variation
Loaf Ingredients
- 1 lb. ground beef
- 2/3 c. milk
- 1/2 c. cracker crumbs
- 1/4 c. ketchup
- 1/8 c. Worcestershire sauce
- 1 medium onion, finely chopped
- 1 t. salt
- 1/2 t. black pepper
- 1 egg, beaten
Sauce Ingredients
- 1 T. ketchup
- 1 T. Worcestershire sauce
- 1 T. brown sugar
Gently combine the loaf ingredients in a large bowl using your hands to mush them together (great chore for the kids!). Spoon into a glass or metal loaf pan. Combine sauce ingredients and drizzle over the top of the loaf. Cook at 350 degrees for one hour or until cooked through.
You can also freeze this recipe! A great way is to line the pan with aluminum foil so you can lift the loaf out of the pan once it is cooked. Wrap it in additional foil or place it in a freezer-safe container before freezing. You can also slice the loaf into individual servings and freeze each separately for an easy single-serving meal.
