A lot of times my side dishes consist of rice and pasta, but every now and then I like to spice things up a little bit with a different accent. While barley is usually reserved for soups, it also makes a wonderful, frugal and super healthy addition to any meal. This recipe is extremely simple and your family is sure to enjoy the change:
Seasoned Barley and Vegetables
- 1 c. barley
- 2 c. beef broth
- 1 c. mixed vegetables
- 1 t. oregano
- 1 t. garlic
- 1/2 t. black pepper
Throw all the ingredients together in a medium pot and bring to a boil. Boil for two minutes, stirring often. Reduce heat to low, cover and simmer for 25 to 30 minutes or until barley is soft. Serve.
Tasty and frugal side dishes do not get much easier than that!
