One of my favorite meals to whip up on nights when I have nothing else prepared is Salmon Pasta Salad. It is super fast and easy and the family just loves it! While there are many variations, here is my favorite:
Salmon Pasta Salad
- 1 box elbow macaroni (100% whole wheat)
- 2 c. mixed vegetables
- 1 can salmon, drained (14.75 oz.)
- 1 small onion, finely chopped
- 1 t. dill
- 2 T. lemon juice
- 1 c. mayonnaise
Cook macaroni per package instructions. Cook mixed vegetables in microwave or on the stove-top. Mix all ingredients together in a large bowl. Serve immediately or chill overnight.
This recipe is great when spiced up with various seasonings like oregano or Season-All Salt. You can also serve it topped with shredded cheese. If you do not have salmon in the house, tuna works as a wonderful substitute!
