What Do We Eat: Wednesday (Link-Up)

Yesterday was a major cleaning day in our house which left little time for cooking. Because of that, we had a lot of leftovers and simple, quick foods but still tried to incorporate variety.

Here's what we ate yesterday:

Breakfast: Peanut Butter toast
Snack:
Popcorn (popped on the stove top and lightly salted)
Lunch:
Grilled cheese sandwiches
Snack:
Leftover No-Bake Oatmeal Cookies
Dinner:
Leftover Vegetarian Fried Rice
Snack:
No evening snack because we had a later dinner

Beverages throughout the day included coffee (for my husband and I), milk and ample amounts of water.

While we didn't do as well in the vegetable category yesterday, you will notice that we never skimp on the whole grains. Our bread is always 100% whole grain, we only use whole grain brown rice and old-fashioned oatmeal. Not to mention, popcorn is a fun and delicious whole grain. I find that, once you set up your menu and shopping list properly, whole grains are effortless to incorporate into your diet.
