New England-Style Baked Beans

I was raised in a tiny town in Maine where the most exciting thing happening were Bean Suppers.  For those who may not be familiar with Bean Suppers, they are just what they sound like: a supper of beans, usually baked beans.  Here is a great meatless recipe for Lent that is sweet enough for your kids to enjoy while being preservative-free, super frugal, and chock full of protein.

New England-Style Baked Beans
  • 1 lb. dry navy beans
  • 2 medium onions, chopped
  • 1/2 c. brown sugar
  • 1/4 c. molasses
  • 1/3 c. ketchup or tomato paste
  • 1 t. salt
  • 1-1/2 t. mustard (yellow, Dijon, or  honey)
  • 1/4 t. black pepper
Put the beans in a pot with 6 to 8 cups of water and bring to a boil.  Simmer on medium-low heat for 30 minutes then let stand covered for 1-1/2 hours or until soft.  Drain.








Stir together all other ingredients in a crock pot and add one cup of water. Then mix in beans.







Cook on low heat for 10 to 12 hours or high heat for 5 to 6 hours, stirring occasionally.
This recipe can also be made on the stove-top following the same basic instructions and stirring more often.
Want to spice up your baked beans?  Try this tips:
  • Add a jar of salsa, a little honey, and some barbecue sauce.
  • Add 1/4 c. of maple syrup.
  • Add 2 lb. browned burger or pork.
