What Do We Eat: Thursday (Link-Up)

Thursday was another simple food day with minimal cooking. As we near the end of the month, the items in our house are dwindling so this is the time to get the most creative and just start using whatever we have. When the majority of the items in your kitchen are nutritious, it makes it easier to swap things around.

Here's what we ate yesterday:

Breakfast: Homemade cinnamon oatmeal muffins
Snack:
Sliced apples
Lunch:
My son and husband had salami & cheese sandwiches; my daughter and I had cheese and onion omelets with mixed vegetables
Snack:
Peanut butter and jelly sandwiches (per my son's request)
Dinner:
Chicken and rice soup from the freezer
Snack:
Old-fashioned oatmeal drizzled with maple syrup

Beverages throughout the day included coffee (for my husband and I), herbal tea for myself, milk and ample amounts of water.

Sometimes saving money on groceries can be as easy as getting creative. Instead of standard snacks, think outside the box (or have your child think outside the box for you!) and try items like peanut butter and jelly, oatmeal, or any other sweet and yummy meal item (check out Sweet and Scrambled Eggs).
