Chocolate Chip Pumpkin Puffs

As the fall season is now behind us, cans of pumpkin puree are often forgotten. But it would be a shame to forget about this versatile, low-cost squash. There are a million ways to incorporate pumpkin into your diet, including through sweets. Start out with this basic recipe that is sure to please the kids. Not to mention, it easily sneaks in a serving of vegetables!

Chocolate Chip Pumpkin Puffs
  • 1/2 c. butter (1 stick), softened
  • 1-1/2 c. sugar
  • 1 (15 oz) can pumpkin puree
  • 1 egg
  • 1 t. vanilla
  • 1 t. baking soda
  • 1 t. baking powder
  • 1/4 t. salt
  • 1 t. cinnamon
  • 1 t. nutmeg
  • 3 c. flour
  • 6 oz. chocolate chips
Beat butter until smooth. Add sugar, pumpkin, egg and vanilla and blend well. Add baking soda, baking powder, and spices. Beat in flour. With a wooden spoon or spatula, stir in chocolate chips. Using an ice cream scoop or large spoon, drop onto an ungreased cookie sheet one inch apart. Bake at 350 degrees for 13 to 15 minutes or until golden brown. Serve warm and gooey!
