Rolo Cookies

If you are a caramel lover, than this recipe is for you. It is a great one to make with the kids. It can get messy, but that is half the fun!

Rolo Cookies

  • 2-1/2 c. flour
  • 3/4 c. unsweetened cocoa powder
  • 1 t. baking soda
  • 1 c. butter, softened
  • 1 c. sugar
  • 1 c. brown sugar, packed
  • 2 t. vanilla
  • 2 eggs
  • 48 Rolo candies, unwrapped
In a medium bowl, combine flour, cocoa, and baking soda. Mix well. In a large bowl, beat butter and sugars until fluffy. Add the vanilla and eggs and beat on medium speed until combined. Add dry ingredients and mix well. Using your fingers, shape 1 T. of the dough around a Rolo candy, completely covering it, and form into a ball. Place 2 inches apart on an ungreased cookie sheet. Bake at 350 degrees for 7 to 9 minutes or until set and slightly cracked. Allow to rest on cookie sheet for a few minutes before removing to cool. Enjoy!
