Fudge Blondie Bars

If your sweet tooth is screaming from something rich and creamy, skip the overpriced bag of Milanos and give these Fudge Blondie Bars a try. They are a frugal, whole grain treat that is sure to please the family, that is, if you are willing to share!

Fudge Blondie Bars

Blondie Bars
  • 1 c. sugar
  • 1 c. brown sugar
  • 2/3 c. butter
  • 2 eggs
  • 2 t. vanilla
  • 2 c. whole wheat flour
  • 1 t. baking powder
  • 1/4 t. baking soda
In a saucepan, melt butter over medium heat. Add sugar and brown sugar and stir constantly until combined. Remove from heat and allow to cool slightly. Mix in eggs and vanilla. Add whole wheat flour, baking powder and baking soda until combined. Pour batter into a 13" x 9" greased pan. Bake for 25 minutes at 350 degrees. Remove from oven and cool completely.

Fudge Filling
  • 1/2 c. butter, softened
  • 1/2 c. cocoa
  • 4 c. powdered sugar
  • 1/3 c. boiling water
Beat butter on medium speed until smooth. Add cocoa and beat until combined. Alternate mixing in powdered sugar and boiling water. Beat until creamy.

Once Blondie Bars are cooled, cut into squares then slice each square in half. Frost both sides (sprinkle on some almonds if desired) and put together like a sandwich.

Enjoy this whole wheat treat!
