17 Frugal Meatless Recipes

With the start of the Lenten season upon us, this is a wonderful time to look at our menus and choose our favorite meatless recipes to offer variety and nutrition without breaking the bank. Fish is the most common option this time of year but I find a lot of pleasure in looking for cheaper alternatives.

Below I share with you some of my favorite meatless dishes and side dishes, including beans, fish and pasta that will keep your family healthy and satisfied without breaking the bank:

Homemade Refried Beans
Salmon Cakes
Macaroni and Cheese
Hummus
Sweet Lentils and Rice
Sweet and Scrambled Eggs
Linguine with Capers
Tomato-Less Chili
Mexican Casserole
Herbed Pasta Primavera
Vegetarian Fried Rice
Polenta Quiche
Depression Casserole
Homestyle Spaghetti Sauce
Homemade Tomato Soup
New England-Style Baked Beans
Lentil Soup
