Almost Effortless Coleslaw

I love coleslaw, but buying it premade is overpriced and several recipes tend to be a little over-the-top for me so instead I have created my own easy, basic and still tasty coleslaw recipe. It takes minutes to toss together the night before so it is ready for lunch or dinner the next day. Requiring few ingredients, this is a wonderful end-of-the-month side dish for when your cabinets start to look a little bare:

Almost Effortless Coleslaw
  • 1/2 c. mayonnaise
  • 1 T. white vinegar
  • 2 t. sugar
  • 1/4 t. salt
  • 1/2 head of cabbage, shredded or chopped
  • 1 small onion, diced (optional)
In a large bowl, stir together mayonnaise, vinegar, sugar and salt. Add cabbage and onion and mix until coated. Cover and refrigerate for at least two hours. Serve.

Because of the simplicity of this recipe, children tend to love it. You can also spruce it up with spices and additional vegetables for some variety. Do not be afraid to play with it, or just leave it as is for a frugal and simple vegetable!
